Faculty, students, and staff at Cal Poly Pomona recently participated in a tasting event for new food products developed by students in the FST 4290L – Food Product Development Lab course. The event took place in early November and provided an opportunity for the campus community to sample innovative creations designed during the semester.
The food products presented included Halva a Nice Day, which are high-protein frozen yogurt bites inspired by Middle Eastern flavors. These bites feature halva—a sesame- and sugar-based confection—combined with nonfat Greek yogurt, tart pomegranate and raspberry chia jam, all coated in a dark chocolate shell.
Another product, Sticky Honey Pudding, is a date- and honey-based pudding cake with chopped pecans and topped with caramelized honey sauce. The honey used in this dessert was sourced from Cal Poly Pomona.
MuscleMac is a protein-rich macaroni dish tossed in creamy Greek yogurt sauce. It features pasta fortified with milk proteins, offering 20 grams of protein per serving along with high calcium and vitamin B content.
Tropilus is a frothy mango-flavored yogurt beverage inspired by Orange Julius. Made using egg for structure, the drink delivers a thick texture without cream and uses nonfat milk and low-fat yogurt.
Cozy Cookies are soft-baked oatmeal raisin cookies infused with chamomile and lemon balm. Designed to help children relax before bed, each serving contains over 15 grams of whole grains while meeting USDA Smart Snacks standards. The cookies come packaged in resealable sleeves suitable for children ages four and up.
These projects showcase the practical skills learned by students in developing market-ready food products as part of their coursework at Cal Poly Pomona’s Food Science and Technology program.
